One good thing about this cookies is that it was not made without the regular flour, only oats and everyone loved it including my hubby who don’t like cookies. You can replace the brown sugar with honey and even add extra fruits for more deliciousness

1over ripe plantain
1/8 cup brown sugar
1/8 cup oil
4 cups oats 1 teaspoon cinnamon powder
1 teaspoon baking powder
1 tea spoon baking soda
Grease the pan with margarine and dust with some flour.
Peel the plantain and put it inside the blender, I used an electric grinding machine.
Add the Eggs, oil and sugar and blend together.
Pour in the oats, the cinnamon powder, baking powder and baking soda.
Mix everything together, the dough will be watery, put it inside the freezer and allow it to solidify for 10-15 minutes.
Bring out from the freezer, scoop with an ice-cream scoop and use your palms to roll in circular shape into a prepared pan.
Place in a preheated oven of 170 decree Celsius for about 20-25 minutes.
Transfer to a wire rack and allow to cool before proceeding to serve.
